1. Steamed white fish

Steamed white fish of Songhua Lake is one of Jilin's famous dishes. The Songhua River is famous for its crystal water, and its fishes have been boiled to treat family and friends since ancient times.

There are two kinds of dishes based on steamed white fish. One focuses on the soup and the fish juice and the light flavor of the fish meat; the other is based on the fish meat and the soup is absorbed into the fish meat during steaming. Both methods have high requirements for freshness of raw materials.

2. Four renowned fishes from the Songhua River basin

Renowned fishes in the Songhua River basin are the Biehua, the Bianhua, the Jihua and the Daozi.

3. Qingling fish

Qingling is a small village in Jiaohe county under the jurisdiction of Jilin city, Jilin province. It is close to Songhua Lake, Qingling Forest Park, Hongye Valley and other scenic areas such as Jilin's famous fish food street.

The cooking of Qingling fish is unique. First, choose a golden scale carp alive from the pond, and then dissect and process it as quickly as possible to keep its freshness as much as possible. The seasonings are oil, salt, ginger and green onions.

There is a special condiment called "Bahao", a wild grass that grows in the local mountains. The plant's color and smell are similar to wormwood. With a slight medicinal fragrance, it gradually disperses throughout a full pot of water and penetrates into the fish meat. The fish tastes fresh and tender.

Today, the dish "Qingling Fish" has been introduced to Jiangsu, Guangdong and Zhejiang provinces and big cities such as Shanghai and Beijing.
